摘要:
广西作为我国优质稻主产区,其独特的亚热带季风气候导致稻谷收获期高温高湿,易造成籽粒水分含量偏高。高水分优质稻在储藏期间易发生呼吸旺盛、微生物滋生、营养成分降解等品质劣变现象,影响了食用价值与商品价值。本文系统阐述广西高水分优质稻储藏过程中品质劣变的物理、化学及生物机制,重点梳理物理调控、化学与生物保鲜、综合协同调控等品质劣变延缓关键技术的研究进展与应用现状,融入近五年国内外相关研究成果并强化对比分析,建立适配广西地域特点的储藏品质评价体系,分析当前技术应用中面临的挑战,并对未来绿色化、智能化、低成本化的技术发展方向进行展望,为广西优质稻产后减损、品质保障及产业高质量发展提供理论支撑与技术参考。
